The California Wheat Commission (CWC) was founded in 1983 to improve the quality and marketability of California wheat. Its main goal is to support research and develop both domestic and international markets for California-grown wheat.
The Commission funds important research, such as the wheat breeding program and statewide field trials conducted at the University of California, Davis.
What makes the California Wheat Commission unique is that it's the only one of 19 wheat commissions in the U.S. that has its own Milling and Baking Laboratory. This lab tests wheat and flour quality, analyzes dough, and conducts baking and noodle production tests. Each year, the lab assesses the quality of California's wheat crop, and the results are shared with potential buyers in both the U.S. and abroad. The lab also tests hundreds of experimental wheat varieties to help develop new and improved types of wheat.
